Chocolate Chips - from 'scratch'


Making homemade, sugar free chocolate...



Melt Coconut Oil in a saucepan over low heat.


Measure cocoa powder...


and Stevia extract to taste.  I used 1 tsp this time...

Stir the cocoa and stevia into the melted oil. 
Stir, stir, stir...
We now have a hot chocolate sauce. 

Just imagine all the ways we could use this just the way it is
YUM!

 BUT...
I need solid chocolate today. 
SO...
pour the melted chocolate sauce onto wax paper

Cover with another sheet of wax paper.

I used 2 plates to flatten the sauce.





Put it in the freezer until the chocolate hardens.




Nice and firm...


Peel off the wax paper...

Cut or break into desired sizes.

This batch yielded about 2.5 oz

A pizza cutter would probably make
nicer cuts for bars but who has time for that?

Spinach and Tuna Salad with Honey Mustard Dressing


So...
I have a freshly made jar of

Honey Mustard Dressing

NOW WHAT??
A simple lunch that is filling and protein packed...

Start with

Spinach,
Tuna,
Honey Mustard Dressing


Add...

 Walnuts and
Raisins

for more great flavor...
 


 

This is the start of what I call my "Everything Salad!"
You can get really creative from here!
consider adding ...
diced tomatoes...
red/green/yellow/orange pepper strips...
onion...
black beans...
diced apple...
???

Honey Mustard Dressing


How about a healthy homemade salad dressing that is as easy to make as it is yummy to eat?

3 basic ingredient plus one "secret" surprise ingredient

Greek Yogurt
Yellow Mustard
Honey

What adds that "secret" flavor boost???

Hmmmm?

DILL PICKLE JUICE!!

Or if you don't have any on hand you could use Distilled Vinegar or even Lemon Juice ... but I think the Dill Pickle Juice is AMAZING in this yumminess...
